Vanilla & vodka


This is a 700ml bottle of vanilla extract. Well, it will be.

Take one bottle of vodka. Split one or more vanilla beans & insert in bottle. Screw lid on tightly. Put in the back of the cupboard for 6-8 weeks.

That's it. The longer you leave it, the stronger the vanilla extract will be.

You can also re-use vanilla beans that you've used for something else (rinse well before adding to the alcohol), and you can use other alcohols that aren't too strongly flavoured themselves. You can 'feed' it by adding more vanilla beans as you go, and top it up with more alcohol. Neverending vanilla extract ...

Hi Karen, this might seem like a dopey question, but does it ever go off? I dont use a lot of vanilla extract so a bottle that large might last me for years....unlike you two LOL!

Now molly - what exactly are you implying about us???

I don't think anything with this much alcohol will EVER go off. And you could always decant some into cute little bottles and give it away for Christmas. Even if you just keep half the bottle for yourself it works out far cheaper than the equivalent amount of vanilla extract from the supermarket, and you know exactly what's in it, unlike that nasty cheap vanilla essence.
